Preheat the oven to 250°F. Spray a rimmed baking sheet with cooking spray.

Lightly beat the egg white with 1 teaspoon of water in a large bowl until frothy. Add the nuts and stir until they’re coated. In a separate bowl, whisk together the sugar, salt, cinnamon, and tea. Toss well with the nuts. Spread the nuts onto the prepared baking sheet and bake for about an hour, stirring occasionally, until the nuts are browned. Remove from the oven and let cool completely.

To make a thoughtful gift, place these almonds in a nice glass jar and attach a handwritten note with the recipe.
